Oyatsupan Bakers has established itself as one of the country’s most authentic and beloved Japanese bakeries since opening its doors in 2016 in Beaverton, Oregon.

While many people associate sushi, ramen, and tempura with Japanese cuisine, bread and pastries are also an integral part of the country’s food culture. At Oyatsupan Bakers, founder Hiroyuki Horie and his skilled team build upon this tradition by baking everything from scratch using Hiroyuki’s extensively researched recipes several times daily to ensure peak freshness and flavor.

A tempting array of enticing treats await at our warm and inviting space. Our signature, pillowy-soft Shokupan (milk bread) undergoes an overnight fermentation process and incorporates yeast we naturally culture from raisins.

Other popular items include the Melon pan, a fluffy bun with a crackly, sugary crust, and Anpan, another kind of bun filled with sweet adzuki bean paste. But it’s the curry donuts guests can’t seem to get enough of. Stuffed with our house-made, Japanese-style beef curry, these irresistibly savory snacks are fried in batches every few hours.

But no matter when you drop by Oyatsupan Bakers or the occasion, you’ll always discover delectable Japanese baked goods made with lots of love and care.

Owner Hiroyuki Horie has dedicated his life to bringing people joy through the art of baking. After working with Pasco Shikishima, a Japanese corporate baking company, for over 25 years, Hiroyuki decided it was the right time to embark on a more personal endeavor. Thus, he unveiled Oyatsupan Bakers in 2016.

As for his baking philosophy, Hiroyuki enlists a less-is-more approach. He explains, “My recipes are based on subtracting ingredients, whereas many Western bakeries believe in adding more while developing theirs.” This mindset allows all of the carefully chosen ingredients in Oyatsupan Bakers’ offerings, from the soufflé-style cheesecake to the tonkatsu sandwich, to shine with their distinct flavors and aromas.

At the end of all, Hiroyuki is grateful to be part of a supportive community. “I believe bread and other baked goods are everyday items to enjoy,” he explains. “While what we do requires a lot of time and collaboration, we love knowing that we’re creating a bit of comfort in people’s hearts.

Our first customer in 2016, the Blue Jay

Since opening in May 2016, we’ve proudly been Beaverton’s first authentic Japanese bakery, serving everything from buttery shokupan (Japanese milk bread) to melon pan, cream puffs, and curry-filled donuts.

On our very first day, a blue jay flew onto the bakery pickup counter with a cherry blossom in its beak.

This symbolic moment became a cherished part of our identity, inspiring our branding and reminding us of the joy and connection that baking brings.
